Great British Biscotti -Not just for coffee

The Great British Biscotti Co produce a twice baked biscuit normally associated with our European friends in Italy, it is now being made in Christchurch, Dorset.

I went along to visit the bakery and speak to the owner Paul Rostand about the biscuits progress and journey to the South Coast of England. Since starting manufacture in 2016 it is fair to say that its reputation has grown so quickly that bigger and bigger premises have been needed to keep up with the increasing demand.

Bigger ovens, a more substantial mixer and a packing machine to speed up the whole process have all been necessary and to progress to the next stage more investment will be needed to increase the size of this equipment yet again.

Recipes have been changed and adapted and now twelve flavours are available with six of them being the more unusual and possibly the world's first savoury flavoured biscotti. think cheese board, charcuterie platter, on those home made soups as croutons or easy bases for those Christmas canapes.

I was lucky to be able to don a white coat and suitably fetching headwear (photo not included) to have a look at how the whole process works. Large mixing bowls with white chocolate, cranberries and pistachios churning away, stainless steel tables for rolling and shaping the mix. Huge ovens with multiple trays of biscotti rolls baking only to be removed, cooled, chopped and rebaked.

Paul has designed the packaging in such a way that it is suitable for hotels to buy in 1kg packs to offer their customers with a hot drink, or in a mini bar, or simply the likes of you and me to snack on of an evening. Unfortunately they didn't last long in our household once the packaging was open we found it hard to stop eating.

Look out for Great British Biscotti Co in farm shops and delicatessens and also trialing in National Trust venues.

This little twice baked biscuit is already winning awards and is soon to become a firm favourite when Ocado start selling them in 2018.
